Zesty kaffir lime, cane sugar, spicy chili and our home-made Coconut chips blend into an intense flavor with enough kick to make these cashews pair well with a cold refreshing beverage.
Ingredients: Cashew nuts (50%), coconut (31%), cane sugar, shallots, sea salt, lime (1%), ginger, chili (0.5%), coriander, lemongrass, turmeric.
Step 1: Peel carrots and onion. Chop the carrots, spring onions, onion and chili pepper. Cut chicken pieces into strips.
Step 2: In a wok over high heat, pour 2 tablespoons of oil. Add the vegetables and add ½ cup of water. Stir the vegetables for 5 minutes and remove from heat.
Step 3: Add the remaining oil to the wok and pour in the chicken pieces and cashews. Add the vegetables and soy sauce. Sprinkle with coriander.
